One of the coolest things about food blogging is that it’s made me so much more aware of other culture’s holidays and food traditions. Today is the kick off of the Chinese New Year celebrations and it’s been so fun reading through all of the traditions and learning about everything. The dish that caught my eye is Nian Gao which is also known as New Year’s Cake. Nian Gao is a glutinous rice cake that is traditionally steamed. I don’t have steamer baskets so I decided on doing Baked Nian Gao, and let me tell you, this cake is delish! Have you ever had mochi? Baked Nian Gao tastes like the cake version of that! I mean, sign me up ๐ Oh P.S. it’s gluten free ๐

INGREDIENTS
- 2 cups (16 oz) Sweet Rice Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 1/2 cups Full Fat Canned Coconut Milk
- 1 1/2 cups Milk
- 1 1/4 cups Sugar
- 1/2 cup Vegetable or Canola Oil
- 1 tsp Almond Extract
- 1/2 tsp Vanilla Extract
- Toasted Coconut, Chopped Nuts, or Black and White Sesame Seeds, OPTIONAL
INSTRUCTIONS
Preheat oven to 325 degrees. Line a 9 x 13 pan with parchment paper. Set aside.
In a large bowl, whisk together the flour, baking powder, baking salt, and salt. Set aside.

In the bowl of a mixer fitted with a paddle attachment or using a hand mixer, mix together the coconut milk, milk, sugar, oil, and extracts.

Add in the flour mix and until incorporated. Scrape down the sides and mix again until the batter is smooth.

Pour the batter into the prepared pan. Add the optional toppings and bake for 60 minutes.


Cut into triangles and serve! Oranges and Tangerines and lucky and are a nice accent for this sticky Baked Nian Gao cake. Gong hei fat choy to everyone who celebrates!
