Um, how is it already October?? September FLEW by, so I guess I need to cram all things Fall in before it’s Winter โ๏ธ. We have a lot of pumpkin ahead in October, so kicking things off with a delicious Butternut Squash Casserole that is a beautiful addition for a Fall dinner party, Thanksgiving dinner, or even a lovely Sunday brunch. This Butternut Squash Casserole is super versatile fills your home with delicious Fall smells
INGREDIENTS
- 2 lbs Butternut Squash, peeled, cut into chunks
- 6 tbsp Water
- 1/4 cup Sugar
- 1/2 cup Vegetable Oil
- 3 Eggs, beaten
- 1 1/2 cup Milk or non-dairy milk
- 1/2 cup Flour
- 2 tbsp Cinnamon Sugar
INSTRUCTIONS
Place butternut squash in a microwave safe bowl. Add the water and cover the bowl with microwave safe plastic wrap. Microwave for 15 minutes. Let cool slightly and mash until smooth.
Preheat the oven to 350 degrees and grease a pie plate or a 9 x 9 baking dish with cooking spray. Set aside.
In a large bowl, beat together the sugar, oil, eggs, milk and squash until combined. Fold in the flour until just combined and pour the batter to the prepared dish.
Bake for 30 minutes, remove from the oven, sprinkle with the cinnamon sugar, and return to the oven for another 30 – 40 minutes until golden brown and set.
This dish smells HEAVENLY in the oven and out and is instant dinner success. Enjoy!
