Is it just me or has this year FLOWN by?! Somehow Memorial Day is here again and so is our first wedding anniversary โฅ๏ธ I’m not sure how an entire year has happened since we got married, but here we are! In honor of the occasion I have to share my all-time favorite pic from our wedding and then I swear we’ll get down to this Easy Cucumber Salad business.

Ok, Ok, as promised! With the long weekend fast approaching and official kickoff of Summer right around the corner, this felt like the right time to share my go-to Easy Cucumber Salad. It’s light and refreshing, and is not mayo based so it has a better (safer) shelf life at cookouts. Happy Summer!

INGREDIENTS
- 2 English Cucumbers, thinly sliced (or 4 Regular Cucumbers, peeled & thinly sliced)
- 1 Onion, thinly sliced
- 1 cup Red Wine Vinegar
- 1/2 cup Water
- 3/4 cup Sugar
- 1/2 tsp Salt
- 1 tbsp Fresh or Dried Dill
INSTRUCTIONS
Place the cucumbers and onions in a mixing bowl.

In a saucepan over med-high heat, combine the vinegar, water and sugar and bring to a boil. Remove from heat. Pour the hot vinegar mixture over the cucumber/onions and stir in the salt and dill. Cover with plastic wrap and refrigerate until cold.

Serve this Easy Cucumber Salad cold. Just add cookout ๐ค
