Good news! I heard a rumor that 2020 is almost over–I mean, I’ll believe it when I see it, but that’s what they’re claiming.

Even though this year has felt like 10,000 years, I’m still surprised that Hanukkah is almost here. In honor of this dumpster fire of a year, and the holiday of all things fried, let’s fry some stuff. Now, I’m all in favor of eating fried foods, but I am really not a fan of pan or deep frying at home. It makes a BIG mess and my hair smells like fried food after–trust me, your hair smelling like fried food is not as good as it sounds ๐
To get that crispy fried goodness everyone is looking for on Hanukkah, it’s time to oven fry! These Oven-Fried Latke Cups are, dare I say, the perfect Hanukkah recipe. Crispy on the outside and fluffy on the inside ๐ You can’t go wrong!

What is a latke?
Latkes are potato pancakes that are customarily pan-fried. Latkes can also be oven-fried or even baked!
Why do we eat fried foods on Hanukkah?
Fried foods are eaten during the holiday to celebrate the miracle of Hanukkah. In the story of Hanukkah, there was only enough oil to light the ancient menorah for 1 night, and the menorah remained lit for 8 nights.
Why do cut potatoes turn brown?
Cut potatoes begin to change colors (or oxidize) when they are exposed to air, due to their high levels of starch. They may turn reddish brown, gray, or even black. They are 100% safe to eat, they just may look a little less delicious. Placing cut potatoes in ice water can prevent oxidation.
INGREDIENTS
- 3/4 cup Canola Oil (Olive oil is NOT recommended)
- 5 Large Russet Potatoes (approximately 3 lbs), peeled and grated (store in a bowl with ice water to prevent browning. Drain prior to use)
- 1/2 Large Yellow Onion, ends removed, peeled and grated
- 3 Large Eggs, beaten
- 2 tsp Salt
- 1/2 tsp Ground Pepper
INSTRUCTIONS
Preheat oven to 425 degrees. Liberally spray a 12 cup muffin tin with cooking spray. Add approximately 2 tsp of oil into each muffin cup (reserve the remaining oil*). Place the tray into the oven and heat for 10 minutes. While the pan is heating up, let’s mix the latkes.
In a large bowl, combine all remaining ingredients (including the remaining oil). Once the pan is done heating, carefully remove it from the oven, quickly scoop the potato mixture into the pan, and bake for 40 – 60 mins until crispy and golden brown. While the latkes are baking, line a plate with a few sheets of paper towels and set aside. Carefully remove the pan from the oven from the oven and use a spoon to transfer each latke cup onto the paper towel-lined plate.
Serve hot and enjoy these Oven-Fried Latke Cups on their own, or served with applesauce, sour cream, ketchup, or mustard! TIP: If the latke cups aren’t coming out the pan easily, run a sharp knife around the edge of each muffin cup to release the latkes.
