I was craving takeout all day today–blame it on the rainy weather and the wedding diet (1 month to go!!). Anyway, this was the perfect excuse to make this better-than-takeout Slow Cooker Beef and Broccoli! I don’t know about you, but when I’m trying to watch what I eat, I always have the most success when I don’t feel like I’m missing out on delicious foods. This recipe tastes just like takeout without all (ok most) of the guilt!

INGREDIENTS
- 1 1/2 lb Denver-cut Steak or another marbled cut of meat
- 1/4 cup Cornstarch
- 2 tbsp Olive Oil
- 2 Garlic Cloves, minced
- 3/4 cup Soy Sauce or Coconut Aminos
- 3/4 cup Water
- 1/3 cup Brown Sugar
- 1 cup Grated Carrots
- Broccoli Florets
- Chopped Scallions for garnish (optional)
- Sesame Seeds for garnish (optional)
INSTRUCTIONS
Slice the meat into thin strips

Add the cornstarch to a large ziploc bag or bowl. Add the meat and toss or shake to coat. Set aside.

Add the olive oil, minced garlic, soy sauce, water, brown sugar and carrots to the slow cooker and stir to combine.

Add the meat and any extra cornstarch into the slow cooker. Mix to coat the meat in the sauce.
What is Cornstarch and What Does it Do?
Cornstarch is derived from corn kernels, which are ground into a find powder. It’s mostly used as a thickener/binder in savory sauces and baking. Cornstarch is going to give us a nice thick sauce for our Beef & Broccoli.

Cook on high for 2 1/2 hours or on low 3 – 4 hours until cooked through and tender. When you have 1 hour remaining, add in the broccoli and toss to coat.

This Slow Cooker Beef and Broccoli is great served with brown or white rice. Garnish with chopped scallions and sesame seeds if desired. I hope you love it!
