INGREDIENTS
- 4 – 6 Chicken Thighs, bone-in, skin on
- 1 medium Onion, diced
- 1 cup Cranberries
- 3 tbsp Brown Sugar
- zest of 1 Orange
- juice of 1 Orange
- 1/4 tsp Cinnamon
- 1/4 tsp Ground Ginger
- 1 tsp Salt
- Parsley, chopped GARNISH
INSTRUCTIONS
Put the diced onion into the slow cooker. Place the chicken thighs on the onions and add the remaining ingredients to the slow cooker.
Cook covered on high for 3 hours on High. Vent the slow cooker (move the cover off kilter) and cook for 30 more minutes.
Cook time will vary based on the size of your chicken thighs. Cook until the internal temperature reaches 165 degrees.
Garnish with chopped parsley and serve hot.

Hi Talia~ This is one of my favorite flavor combinations. Last Thanksgiving, I decided to ‘play’ with my Fresh Cranberry Sauce recipe to try to enhance the flavor. I read through quite a few recipes selecting ingredients to add to the pot I thought would work. So, when I read your chicken recipe, I knew it would taste great.
