I hope everyone had a wonderful Thanksgiving! Today I wanted to share my Sweet Potato Shepherd’s Pie that is one of my favorite go-to recipes for chilly nights. I LOVE finding ways to lighten up comfort food, and this totally fits the bill! I think I need some lightened up food after all that pie 😂
You can easily change up the spices or veggies to whatever you have or want! I’d love to hear what you think 🙂
INGREDIENTS
- 5 Small/Medium Sweet Potatoes
- 2 tsp Olive Oil, divided
- 1 – 1 1/2 lbs Ground Turkey
- 1 tsp Salt, divided
- 1/2 cup Flour or GF Flour
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 2 cups Chicken Broth
- 1 small Onion, diced
- 1/2 cup Frozen Peas
- 1/2 cup Frozen Corn
INSTRUCTIONS
Pierce potatoes all over with fork or knife. Place in a microwave-safe bowl or dish and microwave for 17 minutes or until potatoes are tender. Set aside to cool.
In a large skillet, heat 1 tsp oil on medium-high until hot. Add turkey and 1/2 tsp of salt and cook until no longer pink, sautéing with a wooden spoon.
Add flour, garlic powder and onion powder to the turkey in skillet; cook 1 minute, stirring. This will absorb the liquid in the pan and will get a bit sticky.
Add broth and heat to boiling. Cook 1 minute or until mixture thickens slightly.
Transfer the turkey to a 2 qt baking dish. Set aside. This is a good time to switch to a rubber spatula to avoid cross contamination.
Preheat oven to 375 degrees.
In the same skillet, lower the heat to medium and heat 1 tsp oil. Sauté the onions, peas, corn, and 1/2 tsp salt until the onions become soft. While you’re sautéing, the little turkey bits on the pan will begin to loosen up. Mix those in!
Once cooked, spread veggie mixture over the turkey in the baking dish.
When cool enough to handle, cut potatoes in half and scoop the flesh into a medium bowl.
Mash the potatoes until smooth, and spread over the veggies/turkey.
Cooked sweet potato skins = ready made dog treats if you have a pooch nearby!
Bake uncovered for 40 minutes and serve! I love that this Sweet Potato Shepherd’s Pie is a complete meal in one dish 🙌
