If you ask most kids what they think of meatloaf, you’ll likely get the same scrunched up face. Meatloaf is just one of those things put on this earth for parents to force kids to eat. I remember feeling tortured by meatloaf night, and now we’ve come full circle.. I’m almost ashamed to admit it but my dinnertime nemesis has now become a staple in my dinner repertoire. I guess turkey meatloaf is in the same category as brussels sprouts, broccoli and all of the other things parents force their children to eat ๐
Tonight was a perfect example of why meatloaf is a necessity. I spent the entire day in the kitchen on baking projects–toggling between a challah baking extravaganza and tediously laminating croissant dough (2 days later and the dough is tucked in for one last night the fridge), and I forgot to make dinner. Whoops! I had exactly 1 pound of ground turkey defrosted and needed something with little to no prep. This turkey meatloaf recipe was exactly what I needed! So here we go:
INGREDIENTS
Meat Mix
- 1 lb Ground Turkey, White Meat
- 3/4 cup Oats or GF Oats
- 1 Egg
- 3/4 cup Plant-Based or Nut Milk
- 1/2 cup Onion, Diced
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1/2 tsp Ground Pepper
Glaze
- 1/3 cup Ketchup
- 2 tbsp Brown Sugar
- 1 tbsp Dijon Mustard
INSTRUCTIONS
Preheat oven to 350 degrees. Grease large loaf pan with cooking spray.
Combine ground turkey, oatmeal, milk, egg, onion, garlic powder, salt and pepper in a medium sized mixing bowl. Mix until just combined using your hands or a rubber spatula.
Transfer meat mix into pan and spread it out so it’s evenly distributed in the pan. It’s not beautiful at this point, but stick with it!
Mix ketchup, brown sugar, and mustard in a small bowl or liquid measure, and pour over meatloaf.
Bake at 350 degrees for 1 hour and 20 minutes.
Remove from oven. Let stand for 5 minutes before serving.
