It’s finally starting to get warm and sunny outside! In honor of hopefully continued warm weather, today we’re going easy, breezy, DELICIOUS with one of my go-to Summer salads. This Watermelon Cucumber Salad is light, refreshing, and really lets the produce shine–ok maybe we kick it up a notch or two ๐โโ๏ธAnd seriously, the hardest part of this little beauty is cutting everything up. See? Easy peasy! And it has salad in the title, so it’s health food right? We’ll leave that one alone…

What Does Watermelon Salad Go With?
Watermelon Salad goes with any summer cookout menu! It’s super versatile because it isn’t overly sweet, and is naturally vegetarian and dairy/gluten free!
Now let’s get that melon
INGREDIENTS
- 1ย Small Seedless Watermelon,ย cut into 1 inch cubes
- 1ย Large English Cucumber,ย sliced into half moons (you can also use 2 regular peeled cucumbers)
- 6ย Scallions,ย chopped (green parts only)
- 1/4ย cupย Fresh Mint,ย chopped
- 1/4ย cupย Balsamic Vinegar
- 1/4ย cupย Avocado or Olive Oil
- 1/2ย tspย Salt
- 1/4ย tspย Ground Pepper
INSTRUCTIONS
In a large mixing bowl, combine the watermelon, cucumber, scallions, and mint. Ok, the hardest part is done ๐

In a small mixing bowl or liquid measure, mix together the balsamic vinegar, oil, salt, and pepper. Pour over the watermelon mixture, cover with plastic wrap and refrigerate at least 2 hours or overnight prior to serving. I personally like to do this the day before serving so it’s one less thing to do that day, and the flavors really develop overnight.

Serve this Watermelon Cucumber Salad chilled and enjoy! It will pair well with any cookout menu and I extra love it with a nice Flank Steak ๐
