OK, I have a confession to make. I am a little obsessed with chicken thighs. They’re delicious, super versatile, and they come together in a snap! How are you not obsessed with them yet?? Let me convince you with this delicious weeknight crispy chicken thigh recipe that is perfect for a weeknight…or any night that you aren’t feeling like being barefoot in the kitchen all day.
INGREDIENTS
- 4-6 Chicken Thighs, Bone In, Skin On
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 2 tsp Paprika
- 2 tsp Salt
- 2 tsp Ground Pepper
- Olive Oil, for drizzling
INSTRUCTIONS
Preheat oven to 350 degrees.
Line a baking sheet with aluminum foil, and spray with cooking spray.
Place chicken thighs on prepared pan, skin side up, spacing them out a little. This just gives them more room to crisp up.

You know what isn’t beautiful to photograph?? Raw poultry…
Sprinkle garlic powder, onion powder, paprika, salt, and pepper over each chicken thigh. Don’t hold back! I love the deep flavor that these spices lock into the skin. Let’s pretend that part is fat free and look the other way ๐
Drizzle or spray a drop of olive oil on each thigh.
Bake for approximately 50 minutes or until the internal temperature reaches 165 degrees. Your home is going to smell INCREDIBLE while this bakes. You’ve been warned! Once out of the oven, I like to baste with some of the drippings, because, drippings ๐
